Citrus Cake with Sweet Wine

Preheat the oven to 375 degrees. Ingredients Beat in mixer for four minutes: 4 large eggs 1 cup sugar   Mix dry ingredients: 1 ¾ cup unbleached white flour 1  ½ teaspoons baking powder ¼ teaspoon salt   Blend wet ingredients: ⅓ cup sweet dessert wine ( Turkovich Vintage Port Tempranillo, $30 is good) ⅓ cup fresh orange juice 1 tablespoon orange zest 2 teaspoons lemon zest Add flour mixture and wine mixture to eggs and sugar. Beat for two minutes on medium speed. Pour into pan and bake for 40 minutes, or until sharp knife inserted in cake comes out clean. Blueberry Topping 2 cups fresh or frozen blueberries 2 teaspoons honey 1 tablespoon wine While cake is baking, place fruit, honey and wine in pan. Heat over medium-low heat until the blueberries give up their juice. Dust cooled cake with powdered sugar and serve with blueberries.]]>
