Green Beans and Mushrooms with White Wine

4-6 servings 1 pound green beans ¼ cup unsalted butter, or 2 TBSP butter, and 2 TBSP olive oil 1 medium white onion, chopped 8 ounces white mushrooms 1 teaspoon thyme ½ cup dry white wine 2 tablespoons lemon juice 2 tablespoons cream or Half & Half 1 teaspoon wheat or tapioca flour Salt and pepper to taste   Trim the ends of the beans and steam until desired tenderness is reached (6-10 minutes.) While the beans are cooking, melt butter in a pan and add chopped onions. Cook until edges are just becoming translucent. Add mushrooms, thyme, lemon juice and wine. Cook until wine is reduced and vegetables are becoming tender. By now the beans should be sufficiently steamed. Add beans to pan. Stir flour into the cream. Add to the pan and cook until mixture bubbles and thickens. May be served with additional lemon wedges. ]]>
