Carboni’s anticipates opening to the public mid-February

With only a final city inspection left to go, it seems the most anticipated restaurant in Winters is soon to open.

On Feb. 10, Carboni’s Ristorante will open to the public for breakfast and lunch, according to Michael Olivas, Managing Member for Hotel Winters LLC, an owner, developer for the project and majority investor in the Hotel Winters Restaurant Event Center said in an email to the Express.

Hotel Winters staff will get to eat first at a Feb. 3 soft opening. Then, invited locals will get to try the food Feb. 4-6, Olivas said.

“The 10th we will open to the public for breakfast and lunch and probably do some soft opening for dinner later in the week,” Olivas told an Express reporter.

While satisfying the final inspection list is important, it would not prevent the restaurant from opening, said City of Winters building official Gene Ashdown.

“If all fire and safety and accessibility issues are addressed,” Ashdown explained, “a temporary license could be issued.”

Hotel Winters general Manager Guysell Geter had not returned requests for comment regarding the restaurant’s opening by press time.
